Made from organically farmed Left Bank grapes affected by noble rot (or botrytis, a useful fungus that concentrates flavours in sweet wines), this was aged for 18 months in French oak barriques with an additional 9 months in concrete vats, preserving some of that crisp fruit character. Shimmering gold in the glass, this is classic Sauternes – manuka honey, gauzy white florals & luscious, opulent fruit balanced by refreshing acid. For lovers of a savoury dessert, pair this with a foie gras parfait or hard salty cheeses for a one-way ticket to Flavourtown.
