#DolcettoGangFerever! Fausto and Cinzia Cellario are 3rd generation winemakers, organically tending to their 13 hectares in the village of Carru, on the western outskirts of the Langhe. The family exclusively works with local Piemontese grape varieties and will wholeheartedly defend their local winemaking traditions to the end. For ‘Duzat’, half of the grapes are crushed, while half are left whole (but destemmed) to give the wine a carbonic aromatic lift and soften the tannic blow. Strawberry jello surprise, smoky herbs, tiny cherries, gardenia, picking turkey tail mushrooms, cedar slab, black fig & tongue tingling acidity. Enjoy with beef chow mein.
