A brand-new-to-Ontario, pinot noir. Since 2004, mythical winemaker Jean-Marc Dreyer (dubbed wizard of maceration by many) works his seven hectares of old vines (20-80 years) fully organically and biodynamically, producing seriously BELOVED, intricate & age-able cuvées. FUN FACT! Treatments in the vineyard are based on sulphur and copper, herbal teas + decoctions (mainly nettle, horsetail, willow) & manure #yummyfortheearth. ‘Elios’ is macerated 8-10 days to pull young-forest-like tannins – partially-carbonic for gracefully-winged aromatics – then aged for nine months in old barrels to chillax. Ethereal chalk texture, flint, plush purple plums, bison, herb bundle, sun cured cherry blaster, trapped co2 like a crackling record, salty cowboy dry, divulges smoke as time goes on & just enough juice to keep you happy as a clam.
