Inspired by a need for more BITTER! Just over yonder in Guelph Ontario, natural fermentation titan Tariq is a mega-nerd doing mega-delicious experiments. Weaving farm-grown and foraged fruits together with so much love, Revel creates wines, ciders & hybrid sips aplenty. Elvi is a blend of textural skin-contact riesling (34%) and sauvignon blanc (66%), harvested in 2020, that spent nine months on the skins of Dolgo crabapples (picked from the fence line of an orchard in Beamsville!) to create a delicate bitterness & tingly tannin structure. From the winery: “an overlap wine, bridging the gap between the different fruit worlds we live in”. Tropical fruit salad of guava blossoms, mangosteen, lychee and walnuts, peach punch, darjeeling steeped in the sun & fennel. Enjoy poolside in your cutest cropped tie dye top.
