Sven and Florian farm their land organically and biodynamically and all the steep vineyard work is done by hand. Yields are kept very low, and the grapes pressed with a traditional basket press (picture medieval village life). The Pinot Gris undergoes a short, weeklong maceration before being moved into a clay tank, where 30-40% of the skins are added back in to age a further 10 months. This combination of maceration stages produces a drinkable yet age-worthy conundrum. You’ve got quince, loads of peach skins, dried savoury herbs, and warm spices.
