The darlings of German Pinot Noir, Baden-based Sven Enderle & Florian Moll prove to be anything but one-trick-ponies with their wide range of other varietal wines, including this skin-contact Pinot Gris. Sven and Florian farm their land organically and biodynamically and all the steep vineyard work is done by hand. Yields are kept very low, and the grapes pressed with a traditional basket press (picture medieval village life). The Pinot Gris undergoes a short, weeklong maceration before being moved into a clay tank, where 30-40% of the skins are added back in to age a further 10 months. This combination of maceration stages produces a drinkable yet age-worthy conundrum. You’ve got quince, loads of peach skins, dried savoury herbs, and warm spices.
