Fermented mostly whole cluster, the grapes were aged in a combination of concrete, French oak and Austrian foudre for 11 months, then bottled unfined and unfiltered. A hot night on the town where you’re the main character – juicy, red cherry suede, pomegrante gelato stain, anise in a spice sachet, rolled cig, bouquet of herbs & an upper octave of acid that sings into the night. Pair with spicy seafood paella & the sound of waves crashing.
