A rich, mineral and concentrated chard from Piedmont. Australian winemaker Dave Fletcher moved to Barbaresco in 2016 and has been working with organic and biodynamic farming, and low intervention winemaking techniques out of an old train station ever since. FUN FACT! Dave offsets his land used for grape production through the protection of an equivalent sized area covered by forest, swamp and grasslands rich in biodiversity! Due to the cool location, the vineyard is not very suitable for Nebbiolo, but Chardonnay thrives. The chard was harvested in two distinct picks, the first for zippy citric acidity, the second for depth, and both were slowly pressed in whole bunches. Spending some time in a mix of new (30%) and old (70%) French oak for a touch of grandeur, ten months on the lees (without stirring) to add weight and left unfined and unfiltered to retain ALL that it had developed thus far in its journey. Green melon, teddy bear stuffing, graham crackers, flint strike, lemon concentrate & meeting ROCK the Rock Rockson. Truly delicious, enjoy alongside a meal of twice-baked potatoes, bacon, chives, cheddar & pure joy.
