A sun-kissed, textural and crisp, high altitude, volcanic rosato from an emerging Sicilian producer. Now on her fifth vintage, winemaker Sonia Gambino works on Mount Etna, Sicily, tending to ancient parcels of regional vines. The project is dedicated to her grandfather, nicknamed "Gustinello" by locals, as he had once run the village's palmento, a communal winemaking facility where residents brought their grapes for processing. Sonia’s rosato is a field blend of red and white grapes, that came from a single vineyard in the contrada Nave, located at almost 1300 meters above sea level and surrounded by woodland. The grapes were all pressed directly for an eye-batting hue and fermented and aged for 10 months in stainless steel to keep the wine pretty, pure and perfumed as can be. FUN FACT! “Jungimmune" translates to "let's unite”, a fitting name for such an integrated collection of (approx. 10 different) regional grape varieties! Vibrantly volcanic, whole pomegranate, plum and cherry blossoms, spring honey, white tea, underripe apricot, a creamy, tactile minerality & mixed herbs. Enjoy alongside roasted chicken thigh and morel sauce.
