Alex Götze and Christoph Wolber are a pair of star-crossed winemakers – deeply infatuated with the wines of Burgundy and propelled by their German roots. The Gutedel, aka Chasselas, is from an eager 30 year old, biodynamically farmed parcel brimming with life and possibility. 50% of the grapes are direct-pressed in barrels, the remaining 50% are fermented on skins & everything is aged for six months on lees for an inkling of quince-pulpy texture. Robed in buttercup yellow with chamomile & summer-pollen tickles, lemon sherbet and russet apple with a pebbly trickle of mountain water babbling through. Try with smoked salmon, caraway crackers & a sauna filled evening.
