Think of Notias as a deeper dive into Aspro Potamisi, the regional Greek grape that Jérôme Binda has transformed into an impossibly plush skin-contact wine that compelled us to yell “Shut up, you’re so good!” at it. Notias also refers to the Vent d’Afrique, the whimsical and wildly powerful Mediterranean wind that blows through his vineyards, much to the chagrin of microphones and hats everywhere. Vinified from ancient, own-rooted bush vines, tannins are present but take a backseat to all of the ripe, silken fruit happening here. Candied orange peel, gooseberry marmalade, pineapple upside-down cake, maraschino cherry, wildflower caramel & white tea tannins. Pair with the first fruits of spring: fresh figs drizzled with honey, poached apricots & cherry buckwheat tart.
‘10+12’ is new to Ontario and refers to a 2015 blend of Vat 10 with Vat 12, early Aspro Potamisi with late Aspro Potamisi – the name clearly stuck. Savoury and slightly salty with notes of preserved & fermented lemon, macadamia, apricot fuzz, wildflower honey, ginger chew, barrel toast and a touch of peat. Take a bit of Saint Tropez, a touch of Miami and a healthy dose of Greek charm and you get this, an entire sabbatical in a bottle.
