This is the second release from the new limited brand KINO which was developed by Gensaka in 2021 based off of the concept “return to farming”. Made in the kimoto style, Ise Nishiki is a tasty regional rice that has never been crossed with another strain, and was previously thought to be extinct, harvested here from the Mie prefecture. Rounded stone-fruity mouth feel, savoury rice bran umami, tickling bitterness & a dashi-like salinity. Enjoy with gingery pork gyoza.
