This perspective made him skeptical of more conventional and rigid winemaking approaches and led him to organic agriculture. This is the first time these wild boundary-pushing wines have made it to Ontario and we were excited to scoop it up. This mouthwatering light red sees 3-4 days of maceration and seven months of fermentation in concrete vats. Tart red fruit with a natty snarl, cleansing acid, crystalline and serene - be it from the mosh pit or a runner’s high - feel the catharsis move through you.
