A rare, rollicking and salty Italian rosato. American winemaker Joy Kull works in a zero-zero fashion on her thriving regenerative farm in Lazio, Italy. Joy’s first official vintage was 2016 (poured at her wedding), and today she farms nearly five hectares of both old and newly planted vineyards to produce roughly 30,000 bottles of deliciousness per year. FUN FACT! ‘LIMO’ is short for ‘Limonata’ which references the first vintage of this wine. That year, the deer were eating all the grapes and so, as the saying goes: when life hands you lemons, make lemonade! They harvested what they could before the grapes were ripe, and the wine was VERY high in acidity – like a lemonade! Today, the acidity has relaxed, but the enterprising spirit remains. The 30-year-old sangiovese for ‘Rosato Limo’ was grown on volcanic sandy soils, picked by hand and macerated for 24 hours on skins for colour and tactility, before being pressed for fermentation. Candied rhubarb VA, lemongrass, Saskatoon berries, fermenting your own hot sauce vegetables, blood orange, extra pith, hibiscus, marigold, the look in someone’s eyes when they really want to kiss you & a feverish sapidity. Joy recommends enjoying with a slice of prosciutto and some pecorino cheese!
