Last House is a small batch winery situated on the beautiful limestone shores of Lake Ontario that uses both estate fruit as well as purchased, or négoce, fruit from trusted local growers. The blanc de blanc is a traditional method sparkling wine made with estate grown chardonnay that spent 42 months on the lees, and was hand-riddled and disgorged before gracing our shelves. Made in a classic brut style, quench your thirst for bubbles with the fine tension between slight oxidation, sweeping acidity and leesy weight. Brioche cooling on the countertop, a ringing lemon acidity, bruised green apple meets medlar, pear slices, lime zest, cream-dressed pastry, raw almond & a lengthy, tactile, crushed rock minerality. Hold onto this bottle for a few years as a bit of a short-term Ontario time capsule, or enjoy after your trip to the Prince Edward Point Bird Observatory (PEPtBO), this National Wildlife Area was established in 1978 and covers 560 hectares!
