The dry, arid temperatures and coastal influence make for healthy, salty grapes produced from his three hectares of old vines. FUN FACT! All fermentations are done whole-cluster as he does not have a de-stemming machine! After 15 months in old oak barrels we get chalk candy, blueberry essence, bitter earth alive with mycelium & woody spice. Enjoy snuggled on the couch with a proper murder mystery.
