Éric and Christine Nicolas began their revered, certified biodynamic estate in 1995 by restoring an old farmhouse and slowly collecting there now twenty hectares of stunning vines, spread across five distinct communes. The delicate 'Prémices' is 100% chenin blanc from 24 individual plots ranging from 10-40 years old. The grapes for this cuvée are selected based on being the MOST fruit forward of the harvest, and spend 10 months aging in barrels on fine lees to bring complexity beyond fruit. Floral fog, quince curd, autumn apples, bees wax drips, honey lozenge, confit lemon, tarragon, pineapple can, salt on slate & hoppy bitters. A deep pleasure to enjoy with cheese, anything spicy, with dessert (for dessert) or simply because you feel like something undeniably delicious.
