Wife and husband team, Silke Wolfe and Hans-Bert Espe, work Shelter’s five hectares of organically tended land with a lot of heart and little to no intervention in the cellar. FUN FACT! They’ve recently built a new energy efficient winery that is completely underground (aka no temp control required!), and installed solar panels. Sitting in a cool microclimate near the Black Forest, think Brothers Grimm fairy tale settings, their rich limestone soils practically beg to be planted to pinot noir. Lilly (an ode to their late vineyard dog) sees 10 days of skin contact for subtle and sustaining tannins, before one year developing in large oak barrels, including a softening malolactic fermentation. Strawberry coulis perfumed, fallen cedar in dirt, dried bouquet, sweet n’ lightweight spice, tea leaf & patches of minerality. Enjoy with any movie featuring talking dogs.
