After coming across a killer source of organic pinot gris from a vineyard in Chico, California, they knew a ramato (a historical style of producing pinot grigio in the Friuli-Venezia-Giulia region of Italy) was in their future. Rich and spiced pinot gris (80%) is co-fermented and macerated for 13 days with acidic and plush chardonnay. Citrus slaw, strawberries jumping a strawberry fruit roll up, prickly pear jolly rancher, little bit of musky melon funk & white balsamic. Enjoy with an airy mesclun salad and kimchi grilled cheese.
