Mario Siragusa is a truck driver by trade and began his passion project in 2013 after stumbling across small abandoned vineyards while running. Officially, it began in 2018 with the bottling and selling of six demijohns! With no background in winemaking, Mario uses intuition and inspiration from the natural wines he loves to drink. This is the first vintage that he has worked with cortese and what a smash! Cortese is known for its Italian stomping ground heritage & heightened acidity (that can be trying to tame). Here it sees five days of skin contact, and is bottled with a small amount of residual sugar (RS) to create CO2 in the bottle (which helps protect the wine from developing any tastes or aromas the winemaker did not intend). Pear pop rocks, warm shells, preserved meyer lemon, fallen yellow apples & teensy weensy bubbles gripping the sides of your tongue. Pour alongside anything with pesto & get ready to applaud!
