A cutesy sake that brings crisp acidity, grounding umami & hopefully, some luck! ‘Lucky Cat’ is part of the small-batch, special series of Kaiun Doi Shuzo, a high-quality brewer established 150 years ago in the Shizuoka Prefecture. Made from Homare Fuji rice, Shizuoka Prefecture's first strain of sake rice (a mutation of Yamadanishiki developed in Shizuoka), characterized by a mellowness that allows you to feel the umami of the rice, with a sharp aftertaste, and rich aromas. FUN FACTS! Homare Fuji Sake Rice has two big qualities: its stalks grow nearer to each other, are shorter and thicker and will not break under heavy winds, even those of typhoons! Plus! This rice contains a lot less proteins than others, which allows for an exceptional maturing of sake! A Junmai Gingo, our pal kitty over here has no brewers alcohol added and is polished to 55% (meaning that 45% of the rice was removed to concentrate flavour). Namazake-like (aka unpasteurized), with white, pulpy fruits like jackfruit, white airheads, starfruit, bread crust, underripe peach & a pungent finish. Enjoy with hamachi collar.
