From Mac Forbes’ ‘Experimental Batch’ series, this fragrant flower drinks quite linear and fresh, an exercise in restraint that was bottled in early spring to rein in some of that aromatic development with no malolactic conversion. Fermented in concrete and small old oak before being aged in old ‘hogshead’ barrels, this rust-tinged white sheds a whole new light on luscious, sweet-scented whites. Jasmine flower, rosewater and a squeeze of lemon with green apple zest and a zippy, refreshing finish. Pair with numbing Szechuan takeout, spicy jerk chicken or extra-rich mapo tofu.
