Here, the fruit was gently pressed before being spontaneously fermented in stainless steel with ambient yeasts, followed by 10 months in oak on the lees and bottling without fining or filtration. Opulent and luxe with a stunning concentration and focus, this Chardonnay has notes of lemon meringue, baked pear, salted Anjou pear, vanilla bean, a touch of matchstick reduction & a distinct, crunchy minerality with a nervy vein of acid throughout.
