Stranded on a desert island level rosé, never tiresome, always kind & showering us with its nuanced air. Since 2016, Macarena del Rio and Thomas Parayre have been the winemaking couple behind Macatho, roosting in the ancient southern Chilean region of Itata. With abundant sunshine, strong Pacific coastal influences and dry conditions due to the Andes to the east, not to mention their deft winemaking hands, it’s no wonder these wines are noted among so many wine professionals and amateurs alike. País is the Chilean name for the aromatic and attention grabbing Spanish grape, listán prieto. Here we see them plucked from 200-year-old (!!!) own-rooted vines and macerated on skins for five days to extract but a tickle of what they are capable of tannin-wise. Hibiscus tea, sweet anise, and a cherry gobstopper on a backdrop of herbs, wielding a blade of acidity. Drink while listening to your favourite version of ‘Ave Maria’ & eating goose.
