Part of a long lineage of local winemaking history, Plageoles is currently looked after by Florent and Romain who organically tend the 23 hectares of white and seven hectares of red varieties. The obscure mauzac originates in the region and is known for its acidity, pleasant bitterness and spice. Made in the ancestral method, aka with no additions and a second fermentation in bottle to create spurting bubbles. Highly aromatic, with apple ginger tart, canned pear, rosemary atomizer, nettle, persimmon glaze, kumquat curd, a parsnip & a toasted, honeyed-nuts finish. Such a darn treat. Enjoy with savoury potato pancakes topped with foie gras.
