A full n’ classic Grecian red for pairing with BIG flavours. Chatzivaritis is a 20-hectare family winery farming in Goumenissa, Northern Greece. Organically certified, the family concentrate mainly on local varieties such as assyrtiko, roditis, negoska and xinomavro. The ‘mosaic’ blend here is mainly dense, umami-flexing xinomavro, woody, tart negoska, with a bit of savoury, spiced cabernet sauvignon. Crimson, no clover, jasmine vine, white pepper, fresh tannins, kalamata olive & vanilla chocolate milk sipped from a hollowed out tree stump. Best enjoyed alongside anything with grill marks, moussaka or stifado.
