Founder Aaron Trotman says if he had come to the beverage game from a hospitality background, NON would not exist. Mentoring under Richard Gonano, lead chemist of Aesop and hair-product maker Kevin Murphy, Trotman approaches wine alternatives in an experimental fashion. NON implements perfumery processes roasting fruits, creating jam blends with verjus for acidity and baked spices for bass notes.
