Drinking like a crisp morning breeze after an unseasonably warm evening. Champagne producer Guy de Forez is housed in a beautiful building in the 17th century town of Les Riceys in the Aube region of Champagne. Sylvie and Francis Wenner farm 12 acres of primarily pinot noir vines, with small amounts of chardonnay & pinot meunier interwoven. The house was one of the early pioneers of farming sustainably in the region, and are currently participating members of the Terra Vitis federation (a certification for wine growing that guarantees the growers' commitment to sustainable viticulture). At once delicate, while maintaining bits of plushness – like silk spun into a carpet or tapestry and worn around one’s body. A swish of copper in colour, crisp like a snowflake melting on your tongue, lemon wedge, crushed stone, almond shards & a hint of maraschino cherry. Pour alongside the afternoon you realize you don’t know what day or year it is, and don’t really care to find out.
