Here 70-80 year old ancient zinfandel vines are picked early to preserve acidity, character and freshness. Whole cluster (25%) grapes are layered under destemmed fruit (75%) for a 14-21 day maceration pulling firm yet supple tannins. Savoury slinkiness, concentrated silky fruits, a deep and brooding heart, dried nori & minerality glistens, like the moon on waves. Enjoy alongside grilled fennel and pork loin, with apple bbq sauce.
