A co-fermented blend of 50/50 biodynamic, Pinot Grigio and Chardonnay grapes that grow close to the windy sea coast. The uniquely stony soil composition is referred to as “caranto”, classified by its blend of clay with hard calcareous deposits – the high level of minerality is the result of rocky debris brought by the Piave River on its way from the Carnic Alps to the Venetian Lagoon. The winery says that the soil, “conveys a compound aromatic balance to every single grape”. Very expressive (remember the roaring), intensely ripe pear, lychee, creamed wildflower honey & an umeboshi sour sensation on the palate. Try it with open fire grilled eel & listening to Eye of the Tiger!
