‘Pandæmonium’ is the capital of Hell in John Milton's epic poem, ‘Paradise Lost’, and we wouldn’t mind going straight to hell for a singular drop of this lofty white. Camille and Mathieu Apffel work in a zero-zero fashion (aka no additives at all!), with a laser-like focus on the alluring local white grapes, altesse and jacquère. From one of the most picturesque vineyards we have ever set foot on, the sappy, acidic jacquère is direct pressed and aged between steel and neutral oak for a bunched up Turkish towel kinda texture. Rocks baking in the underground sun, apple juice leanness, perfectly tongue curling acidity, dinosaur eggshell, collecting every single grand star in New Super Mario Bros & loudly slurping an alpine stream from cupped hands. Devilishly appetizing, fit for the Infernal Council & Christopher Morningstar himself as they perch on thrones of fragmented vertebrae, served by demons balancing platters of burnt psyches & disintegrating morality. #EternalThirstQuenched
