We will forever shout the praises of regional grapes and Pasji Rep Winery’s Zelen is emblematic. Once ubiquitous in the Slovenian valley after which the winery is named, it was on the verge of extinction as vineyard land depleted over time (only 5% of these famous 15th-century vineyards remain in the area) and the remaining vineyards were abandoned. Through the devotion and skill of Franc Premrn and his son Samo, Zelen now thrives, albeit in short supply. It is notoriously hard to grow yet fresh and lightly aromatic, like if Malvasia took a chill pill. Fruit flavs of white melon, unripe apple, white grape Hi-Chew & tinned peach harmoniously hang with some rich patisserie vibes of butter & honey, like some sort of gorgeous peach frangipane tart that you’re eating on a Parisian park bench. Each sip resonates and leaves you buzzing.
