An aromatic, nutty, RARE and elegantly precise Champagne debut! Pauline, part of the celebrated grower Champagne family Bérêche, is here with her first solo release and we are thrilled to offer it!! Pauline is cementing her style through organic and biodynamically tended grapes, minimal sulphur use, long lees aging and very low dosage. FUN FACT! The 2019 was finished with no dosage, however there is some residual sugar which adds a balancing, nectarous edge! Sourced from two hectares of old vines in Ludes Premier Cru in famed sub-region Mongane de Reims. A warmer vintage, the blend of savoury, berried pinot noir (65%), mineral, chardonnay (30%) and ZESTY, RARE petit meslier (5%) were vinified in oak and aged 48 months on lees for capital t texture. Tangerine peel, toasted pine nut, brioche, salted green apple, underripe pineapple meets delicate apricot, wild strawberries, silken tofu texture & a chalky, heart piercing minerality. Enjoy with lobster rolls, open fires & trying something new.
