This rare & fiery chacha – aka grape pomace brandy from Georgia – made by American painter turned winemaker John Wurdeman is like NOTHING ELSE in our shop! Instead of getting tossed out after maceration, the spent skins, seeds, and stems from Pheasant’s Tears’ wines get a new life as a super expressive double-distilled spirit aged underground in qvevri (big clay pots) for two years before bottling. The result is a miraculously crystal-clear and super expressive sipper popping off with aromas like T&T dried persimmon, chinese five-spice, funky honey, expensive racehorse hay & vineyard dust (in a good way!). Have it as a digestif when you need to revive your cheese-cursed body after helping yourself to an extra serving of khachapuri – the staple Georgian bread boat teeming with melted sulguni and raw egg yolk.
