Pheasant’s Tears is the natural wine project of American painter John Wurdeman and 8th-generation winemaker Gela Patalishvili, focusing on traditional Georgian varietals made in traditional clay amphora pots called qvevri. Saperavi is kind of like the Nebbiolo of Georgia, producing a light-ish but powerfully evocative wine with a distinct texture and greenness from clay amphora. Made with organic grapes that spent 9 months in qvevri, one could compare this juicy-meets-savoury savant to Carignan, Mourvedre or even Cab Franc on mescaline. Possibly the deepest & darkest wine we’ve ever poured, stewed blackberry and blackcurrant cordial get cozy with black Italian plums, followed by green vegetal notes and big, meaty tannins. Much like A THERAPY with Helena Bonham Carter and Ben Kingsley, recline on the nearest leather chaise and psychoanalyze your dreams.
