Named Pigato from the Italian white grape (often compared to vermentino) called pighe, meaning freckles, which refer to the tiny brown dots on its skins - D’awwwwwwww! The Koerner brothers, Damon and Jono, work to produce unique, minimal intervention wines from the sweeping and sweltering Clare Valley, Australia. The lively and aromatic vermentino vines are 10 years old, and reside on a pocket on Terra Rossa soils (aka well-drained, reddish, clayey to silty soil), which allow this variety to show its absolute best. Left for 20 days on skins with no stems to extract a new dimension of the thinner-skinned grape. Peach tea, lime rind, grapefruit bitters, wet rock, yeast rising, pumpkin seed oil, ginger lozenge & sour pineapple. Drink alongside skinless teriyaki chicken thighs.
