A Quebecois love child of vinegar wunderkinds La Villa and wine heroes Pinard & Filles, the ‘Ciel’ is made from 2021 nutty frontenac gris – and we are welcoming it with open arms for its first time in Ontario! After the wine goes through the vinegar portal (aka gets naturally converted into acetic acid) it ages for another 18 months, imbuing it with extra feisty aromas. Expect notes of toasty hazelnuts, yellow apples from Australia (that’s where they’re actually good), strands of saffron, fresh curry leaves, old butter in the blonde wood cupboard like her parents used to keep it. Good vinegar is the secret ingredient to the best meals – OR DRINKS – so try it drizzled over burrata or mush up some peaches, honey & a splash of this vinegar with soda water and you’ve got a tongue-tingling tonic ready for a sophisticated non-alcoholic moment.
