Grapes were naturally fermented in concrete before 8-12 months in old oak barrels gathering texture. The wine was bottled in the spring without fining or filtration to retain maximum character. Brooding and deep with ripe blackberry, freshly sharpened pencil, and blooming violets. Open early on a deep dark winter night, letting the wine transform in your glass as a rosemary infused winter stew bubbles close-by.
