After taking over his father’s vines in the tiny village of Celles-sur-Ource, ex-sommelier Cedric Bouchard established Roses de Jeanne in 2000 with a very strict, quality-driven winemaking philosophy. Every wine is single vineyard, single variety, single vintage and made with zero dosage, or no added sugar. The grapes are farmed organically, picked at the height of ripeness and pressed with very strict yields, using only the free run juice from the first press – a recipe for success! Give this savoury blanc de noirs the gentlest of decants before savouring by candlelight. With two years of aging and a very low dosage, this unfurls with an expansive but focused profile – overripe orchard fruit, apple galette, beeswax lemon, baking spice, astral-adjacent acid and a vein of chalky minerality. The type of white-hot grower Champagne to say ‘Yesterday’s price is NOT today’s price!” Pair with tahini hummus, pomegranate molasses and raw cacao nibs.
