Beaujolais grit meets Burgundian whit in this slicing, freewheeling red. Antoine Petitprez works with a roster of top Burgundian houses as a consultant on organic and biodynamic viticulture. In 2008 he set up a cellar in Pommard, and, in return for his valued services, he negotiated the ability to purchase treasured grapes from the crowning sites he knew so intimately. From 300 metres up, up, up, these 80-year-old plucky gamay and prim pinot noir vines come together into a clever arrow that only knows its way to a tasty bullseye. Strawberry concentrate, parsley stems, rosehip jam, lemon zest caught in the briar and bramble, parsnips, saline scrub & rockfall mineral tonic. Enjoy with your first attempt at beef tataki and the seaweed salad from Oroshi.
