For Khatia and her team, their winery is a living part of Georgia’s historic relationship with the land and vine, focusing their efforts on representing regional varieties like rkatsiteli, mtsvane, kisi, khikhvi, and saperavi with as little intervention as possible. Fermented in qvevri with skins before aging between qvevri, & old oak barrels, and then being returned to quevri for three years! Black whole hued, black cherry, fallen purple plums, earthy, woody and bark-y spice, tannins like armour & spritely acidity. Enjoy alongside an ancient text, bone marrow shots and pork belly sandos.
