A salty, minerally luxe sauvignon blanc from a Loire legend. After dropping out of high school (#followyourheart), Pierre-Olivier apprenticed at the famed Clos du Tue-Boeuf with brothers Thierry and Jean Marie Puzelat, and then worked side-by-side for many years with Theirry as Domaine Puzelat-Bonhomme. Today, Pierre-Olivier farms 10 hectares of his own vines and rents an additional six, with an admirable focus on single variety expressions of both highly favoured and near forgotten Loire valley grapes. Here, organic sauvy b (planted between 1983-2008) was purchased from a grower in Touraine with mineral-bestowing flinty (silex) clay, limestone, chalk and sandy soils. Direct pressed, fermented and aged on the lees for eight months really give us a sauvy to sink our teeth into with toffee, savoury herbs, flint, arrowroot cookie & a mineral finish. Enjoy with anything swimming in a brown butter and caper sauce.
