The Scarbolo estate encompasses 18 hectares of local Friuli grape varieties and resides in Lauzacco, a short drive from the Slovenian border. Their favourite grape is and has always been pinot grigio, but expressed in its true copper-coloured beauty! They tease this out through the traditional ‘Ramato’ process where pinot gris’s pinkish-grey marbled skins soak with the juice for an amber hue in this case for three days, followed by fermentation and seven months on fine lees with stirring to incorporate a richness and texture. Mint wrapped wild strawberries, flowering rosemary, grated ginger, salt sprinkled persimmon, chalky banana, perfectly ripe cantaloupe, liquorice root & bread crusts.
