Here, winemaker Bernard works to produce regionally-authentic wines by coupling the old, dry-farmed bush vines with low-intervention work in the cellar. Planted in 1988, the old-vine cinsault is hand-harvested from a small parcel on Helderberg Mountain. This famous granite outcrop is known as Sinai Hill, cooled by the winds that roll off the nearby False Bay shore. The grapes are placed in vats as whole bunches for spontaneous fermentation, before gentle extraction, and ageing for several months in small, neutral oak barrels to settle. Peonies infiltrate the rose bed, sweet spices and nipping white pepper, raspberry Turkish delight, tarragon, green leaves, dry earth & a cradle of mineral fullness. Pour alongside potlucks, picnics and parties of any and all kinds.
