A suave Soave, if you know what we’re saying with a loose bow-tie, elegantly messy hair & a devilish smile. Winemaker Laura Rizzotto is cultivating her own little ecosystem in the north of Italy. Here the vines, flowers, woodlands, orchards & bees coexist merrily. This is her interpretation of Soave, and is a delightful expression of their volcanic terroir. The most common characteristics of the region are tropical fruit notes, with pronounced minerality, hints of salt and herbs like marjoram, often with a smooth, oily richness (sauvignon blanc and pinot gris lovers take note!). This one is sapid and mineral, with citrus cured melon, straw naps, sand pear, tense flint, runny honey & lightly salted almond. Pour alongside chicken parm with a side of herby cannelloni beans.
