A spiced, lifted and undeniably delicious red burg to keep on hand in case of emergency. Domaine de la Cadette was created by Jean and Catherine Montanet in the late 1980s in western Bourgogne's Vézelay, and has since grown into three separate labels -La Cadette, Montanet-Thoden and La Soeur Cadette. La Soeur Cadette is the umbrella name that all the wines are produced under, and you may recognize their brawny, block print style négoce (purchased fruit) labels, which stick out on shop shelves like roses among dandelions. Today their son Valentin Montanet has taken lead of tending the 22 hectares of organically farmed vineyards, and is making the wines for all three labels. Plucked from 60-year-old vines in Volnay, Mercurey, and Vézelay, the grapes were whole cluster fermented separately before resting for eight months in old wood barrels. Book of dried roses, the tiniest wild raspberries on the edge of a trail, cherry koolaid, roiboos warmth, mustard green bitters, pepper grinder & finely woody tannins. Pour alongside elk tartare.
