Spring is a blend of 3 different ciders, with a 7 month semi-carbonic maceration of blue, yellow and golden plums. They add the plums whole to the cider, letting them ferment from the inside out just like grapes in carbonic maceration, made famous in Beaujolais. This technique makes the plums even juicer, and almost candy-like—balancing their acidity and the completely dry cider with their naturally sweet plum-i-ness. Strawberry cotton candy La Croix, freshly picked Niagara plums with crunchy acidity that refreshes.
