A salty, herbal and archetypal, volcano-ridden Sicilian white. The familial team of Rori, Cinzia and their daughter Sandra Parasiliti work with great care from vine to wine to make their pristine, punctuated and region-forward delights. Located in Contrada Calderara, the oldest wine production area in the Etna DOC appellation, theirs is a place of long-lived vineyards, care and tradition. Sourced from sandy, volcanic soils high up (700 m) on Mount Etna, the 50-80-year-old blossomy, mineral carricante (80%) and citric, herbal grecanico (20%) were harvested by hand, destemmed and pressed after a 12-hour maceration on skins. Salty minerality, ashy, flinty volcano vivacity, oranges and herbs in bloom, lemon pulp, almond cream & a picnic by the seashore. Pour alongside two dozen oysters and The Wax Child by Olga Ravn.
