Reward without risk, now there’s a cliché we wish there was more of! Dominique was a wine-barrel-maker turned pioneering winemaker who, along with his partner Catherine Derain, made drinkable Burgundian treasures under a biodynamic philosophy. Today he is retired (but still with some involvement) and has passed his property to Carole Schwab and Julien Altaber – partners and winemakers of Sextant, one of our other fave natty Burg producers! A great classic from the estate, but above all, a marvel from the Saint-Aubin appellation, grown on gravelly soils to the cooler north (close to famed AOCs Meursault and Puligny). Fermented whole cluster to promote extraction of structure from the skins, stems & seeds. Lemon butter, apple core, alluvial stone & quince. A pleasing waxy texture like sucking on a first-of-the-season clingstone peach with an unrelenting, lip-smacking mineral finish. Pour alongside reading Ocean Vuong’s On Earth We’re Briefly Gorgeous.
