A spiced, mineral and floral red Burgundy. A leader in organic and biodynamic viticulture, non-interventionist winemaker Sylvain Pataille grew up in and around vines spurring him into attending winemaking school in Beaune, finding his own vines and working as consulting oenologist for some of the region’s most famed domaines. Sylvain got his first hectare of vines in 1999, and slowly grew into his now 14 hectares of owned and rented land, home to aligoté, chardonnay and pinot noir. Planted in 1956 on clay-limestone soils, the grapes are harvested and see a 0-15% whole-cluster gentle extraction, and are aged for 10-12 months in barrel (15% new) to settle and pick up a bit of what the barrels are putting down. Red berries galore, freshly picked, mashed and jellied, peonies, violets, tree bark, orange zest, cinnamon powder tactility & graphite minerality. Enjoy alongside Distinction: A Social Critique of the Judgement of Taste by Pierre Bourdieu.
