His vineyards are cultivated organically and located at an altitude of 450-1000 meters where they catch the cooling influence of the Corinthian Gulf. FUN FACT! Kalavryta is a RARE, spiced and fruit-forward red grape, and they say theirs is the ONLY singular expression made from the variety! Grown on clay soils, the vines clock in at 40-45 years-old, and after harvesting the grapes were destemmed, macerated for 14 days and aged for six months to calm. Smoked cherries + stones, earthy minerality, ground thyme, pomegranate jewels, raspberry spread, anise, laurel & a handful of spice cabinet. Pour alongside beef carpaccio.
